Last month, we were lucky enough to enjoy a foreign experience we haven’t had in well over three months - dining out! AT A RESTAURANT!! Patio dining is the only thing that feels totally comfortable to us right now, so we will continue sweating it out outdoors in order to enjoy refreshing cocktails and chef-made meals.
Where did we eat, you ask? Fia Restaurant, a culinary collaboration between seasoned restauranteur, Michael Greco, and critically-acclaimed chef, Brendan Collins. The restaurant opened in 2019 but we haven’t yet had the opportunity to enjoy its fare… until now!
After we were comfortably seated 6’+ away from other patrons, we kicked off with an “On the Night Spritz”, made with Cynar Amaro, Clement d’Orange, Aperol Apertivo and Sparkling Wine, and a “Smoke Show” created using Mezcal (swapped with Tequila!), Passionfruit, Clement d’Orange, Fresh Lemon Juice and Pepper Heat. Both cocktails filled the bill on this hot summer night.
We also nibbled on a Burrata, Charred Corn and Farmer’s Market Peach dish that came accompanied by waffles. Huh? Yup! You read that right. A fun and spirited dish, for sure…
Next up, we enjoyed the Whole Leaf Caesar Salad made table-side with Parmesan, Anchovies and Croutons. Interactive cuisine is always welcome at my table, whether it be a Caesar, Guacamole or even Bananas Foster; I love a table-side creation.
For our entrées, we enjoyed the Handmade Capellini with Lobster Bolognese, Basil and San Marzano Tomato. The black noodles offered an intriguing remix to the dish we were expecting. This dish was quite creamy, rich and filling, but enoyable.
NOW, let me tell you about the absolute highlight of the meal - Mary’s Organic Chicken “Parmesan” with Mozzarella di Bufala, Pomodoro and Gluten Free Panko Crust. Not only was this dish gargantuan but it was also positively delicious. The chicken was flattened thinly, breaded perfectly and crunchy-crispy - the way it should be! I honestly think the gluten free panko makes this dish that much better. Chef couldn’t achieve the same crunch with a different breading. Can you tell how satisfied I am?! See below.
While we’re not rushing to dine at restaurants every night of the week, our experience at Fia was a positive and comfortable one. We will continue to support the restaurant industry as much as we can through this weird time. Please remember to be respectful when dining out, follow restaurant guidelines and tip your servers well! Oh - and wear your mask!
